This is what I got from R' Avi Cohen Z"L from Israel.
Please do not rely on this without asking your rov, since every case and stage is different.

מוציא ןמצה זה כזית אחד, בסך הכל 3 כזיתים (including Afikomen)

הרב שטיינמן אמר לאברך שהיה במצב קשה, שיאכל רק כזית אחד בסוף הסדר, מימילא הוא יקיים על הכזית היחיד 2 מצוות, גם את אכילת מצה, וגם את האפיקומן, וכורך שלא יאכל כי זה דרבנן, ולגבי יו"ט שני שלא יאכל בכלל מצה, כי זה רק דרבנן

Last year I ordered extra thin Matzah from Lakewood Matza Bakery after I heard from another patient (not on SCD) that was suffering every year till he got the extra thin. I ate 3 or 4 כזיתים (Motzi-Matza =2, Afikomen =2). B"H no negative affect.

However, since the extra thin Matza wasn't even that thin, and I found thinner Matza in other boxes, the 2nd night I ate regular Matza and was feeling BH Perfect.

This year I will not order Extra thin as it is so expensive (~70/lb) I hope to eat regular or Erev Pesach Matza. I can let you know how it was...

Again Every case is different, I know someone who told me he's going to eat Kneidlach...

Forger to mention that BH I was feeling great before Pesach. If your not, then the story might be totally different

I don't understand this - since this person has permission to eat matzah to do the mitzvah both nights of the sedarim, so now he has blanket "permission" to go off the SCD diet and eat kneidlach too? For that matter, he'd might as well eat bagels and bread after Pesach too while he's at it.

Eat Kneidlach instead of Matzah for the Kzeisim

Ohhh, thanks for clarifying :). I hope he asks his rabbi to make sure that's okay.

I follow Avi Cohen's advice together with a psak from our Rav.

All these years I have been eating one keyazis of Mazza for Afikomen to be yoitzeh also Matzah and also Afikomen. Even in the years when I was not doing well - it did not make my stomach aches etc worse.
