A customer from Israel emailed me the following - if anybody has any insights, please share them:\nHi, I was wondering if there is a way to make farmers cheese at home?\nI looked online and I found some recipe with vinegar. Do you know if its possible?

Hi Esther! My grandmother made farmers cheese for me using my homemade SCD yogurt. She took about 3 cups of yogurt, heated it in a pot on a very low flame until it started to curd a little. The she used a cheesecloth to wrap it tightly and get all the liquid out. After the night in the refrigerator of being wrapped tightly with something heavy on it to get the rest of the liquid out, and the next morning I had "farmers cheese". It turned out creamy and tart, but perfect with honey drizzled on top. Maybe it's not "true" farmers cheese but I enjoyed it and wanted to share.

The low fat version in these pictures is legal. 1 g of carbs/30 grams of cheese is legal. \n\nThere are other versions of lifeway farmers cheese that are not legal since they have much more carbohydrates in the cheese.
