Gelatin on SCD?

Hi,\nI am allergic to eggs and dairy which make baking scd breads and cakes a challenge. I have just read that gelatin is an egg substitute. Is Gelatin healthy? Where can I find an Organic Glatt Kosher Gelatin?\n\nPlease let me know. Thank you

Baking without eggs is definitely a challenge. Dairy not so much - you can always sub coconut oil for butter. At Wellbee's, we carry a [pure fish gelatin](http://www.wellbees.com/pure-fish-gelatin.html) - made from tilapia scale. I don't know of any glatt kosher beef gelatin sources.

Kolatin is a kosher gelatin made from beef hooves I believe (OU pareve). It is very hard to find the unflavored variety because it is rather expensive, so many stores no longer carry it.

I am not sure how to advise on this, beef collagen has some awesome health benefits, and the fish collagen is virtually identical in the amino acid profile.
