Yogurt Maker -- is it good enough?

\nI just bought a yogurt maker, which the instructions say will product yogurt after ten hours in the tray.\nIt is a EuroCuisine yogurt maker with 7 glass cups.\n\nCan I just reset it for another ten or more hours, or would that not be safe? I haven't used it yet so I could bring it back. Is the Levele brand that much better for this process?\n\nThank you!\nMary

The issue is that since it wasn't designed to run for 24 hours, it may overheat if you let the machine go for too long. If the machine gets too hot it can kill the good bacteria in the yogurt - a problem for SCD'ers. You would have to work with a thermometer to make sure you're on the right temperature. I don't have experience with the Levele brand. However, I've personally worked with the VitaClay brand to reset their 2 qt yogurt maker to operate for 24 hours within the correct temperature range. The good part with VitaClay is that you can use the same pot to cook the milk and make the yogurt.
