Kolatin is a kosher gelatin made from beef hooves I believe (OU pareve). It is very hard to find the unflavored variety because it is rather expensive, so many stores no longer carry it.

On Raman Prasad's SCD Recipes website, he posted an adapted recipe (broccoli stir fry) in January 2015 where he mentions hat he omitted the ume plum vinegar because it is not SCD legal. He does not list any explanation why. I agree that the ingredients look innocuous enough?

Thanks for clarifying Esther! Are you aware of any kosher brand of SCD legal balsamic vinegar? I've been searching, but most have caramel color added.
