Hi everyone! I thought I’d share this recipe that I created late last night. I threw a bunch of ingredients together, prayed for the best… and my family was licking their fingers (almost)!
I created this cake after reading the health benefits of magnesium. I set out to create a palatable treat that is nourishing, calming, and even healing!
This cake is extremely moist, flavorful, nutrient-dense, and not overly packed with heavy fats. Each large serving size has approx. 6.5 g protein and is under 190 calories. It also is chock full of vitamins:
Magnesium – supports muscle and nerve function and energy production, helps the body relax, reduces stress, and helps you sleep longer. (Almonds and pumpkins are big sources of magnesium)
Vitamins A, C, E, and Iron – help strengthen the immune system.
This cake provides a bit of every vitamin – including vitamins B2, B12 and folate, which are great for digestion!
Easy Spiced Pumpkin Cake:
Serves: 20, Parve
Ingredients:
1 can pumpkin puree
6 XL eggs
1 cup almond flour
1 cup almond butter (dark)
¾ cup honey
½ cup date puree (cooked in water & pureed w water. This can be substituted for a smaller amount of honey)
½ cup apple cider
1 Tbsp + 1 tsp cinnamon
1 tsp nutmeg
½ tsp ginger
½ tsp salt
1 tsp baking soda
Add cloves or similar spice for an extra kick - optional
Blend all with hand blender/food processor.
Bake in a 9x13 pan at 325F for approx. 1.5-2 hours (I lost track at some point), less if in a smaller pan.
